Today there was a long over-due hacking through the accumulated kitchen mess thus that I was able, once again, to cook.
Beans and rice (pretty decent, even without proper sofrito), and vegetables and diced, browned chicken for that jar of korma sauce that's been sitting in my cabinet.
I rewarded myself with a fresh batch of guacamole (1 avocado's-worth) and chips for supper.

Although I find that mixing in lime juice and tomato makes it (a) go farther and (b) last longer. The acid is a good preservative. Leave half of it in the fridge overnight and it'll be a bit brown on the outside, but stir it up and it'll be all green again inside.
