Hence no potatoes. Or legumes. Or plant oils that could not have been processed/accessed before the advent of agriculture.
You get meat (including insects theoretically), eggs, fish, and whatever plant products (fruits, nuts, tubers etc.)would have been foraged and eaten raw (though they can of course be cooked nowadays).
In these modern times, 'paleo'-baked goods are made mostly from nut 'flours', with nut or coconut 'milk' standing in for the diary...

All I wanted was what I wasn't supposed to have.
What I ended up doing with the salt, was that instead of going "cold turkey," I gradually made changes that eliminated the salt. First, quit munching on chips and other salty snacks. Then, I put no extra salt on my meals. I would sprinkle on black pepper, oregano, dried grated lemon peel or one of those commercially-available salt-free spice mixes.
Once I got used to that, I started cutting back in other ways.
Now I can't get the prepared tuna or chicken at the salad bar because I can taste the salt in it...and there's too much of it for me.
I know this is going the long way around it, but I what I am trying to ask is if you had considered phasing in the paleo diet in a similar manner, to get used to the changes? That way you wouldn't have such strong cravings or headaches..
