Made myself a little personal shortbread for dessert tonight just now, using all rice flour - just went by the 4:2:1 rule for the recipe. Going by weight, could do it now anytime; drop a bit of butter in the weigh pan, then weigh out honey (and this time also a little bit of granulated sugar, naughty me, as the honey was scant), then rice flour....

The simplest cookie recipe, yet still would have been expensive to make (for high holidays only) way back when, due to the sweetener being so dear...
