Snow Day lunch: A Trader Joe's salmon patty, small sweet potato, serving of broccoli. All from Trader Joe's, actually - been getting a lot from them lately. The prices are good, they have at least some organics, as well as a (tiny) bit of free-range meat, and they offer products already conveniently in single serving size (like the aforementioned salmon patty).

For me, convenience food cooking involves those single serve meat products (ie, pre-formed meat patties, burger-sized, 4-oz cut outs from fish fillets) and frozen vegetables. In the small wok, frozen vegetables quickly steam themselves, and meat is quickly sauteed with olive oil.

Except for a rare stab at paleo muffins (which were edible, but I gotta work on finding a better recipe), my cooking's been all sauteing /stir frying (except for recent sweet potato boiling). It's easy, it's quick, and usually only one pan to clean.

Both my pantry items and cooking habits have become very simplified this winter; I don't think that's necessarily a bad thing - especially as my home cooking/brown-bagging has been consistent in a way it never was before. My search for paleo-friendly recipes around the web continues, but there's still quite a wide variety of things I can cook until I find more ideas. Just settling on my comfort/quick meals during this nasty winter weather, I guess.
BBQ sauce-coated chicken leg, shoestring fries, broccoli/cabbage/carrot slaw with miso dressing, molten lava chocolate cake with whipped cream for dessert.

Made Mexican food at home for supper tonight...I was of course merely copying stuff I've had at the places I've eaten at here in Bridgeport. But still, a bit more authentic than the deep-fried-cheese-and-sugary-salsa-heavy Taco Bell style stuff most of us are used to.

Had a soft taco: Wrapped in a double-layer of soft white corn tacos was a little heap of warmed carnitas (pre-cooked braised pork, from Trader Joe's!) and sauteed onions. Tender shredded pork - that was it. No cheese, no salsa. (Sadly, I forgot the lime wedge for sprinkling juice on it).

I cooked rice for serving on the side (brown, not white - on my own insistence). I mixed in a handful of cooked peas and carrot pieces, for color. Not quite so authentic, but having the vegetables in there for color was, a bit.

Refried beans on the side also (bought, not made, but vegetarian, so less fat).

Red radish slices on the side.

Tonight's Supper - Sushi Salad:

Greens, salmon (alas, not raw - from a can), cooked rice, cucumber, avocado, sesame seeds, asian dressing (oil, vinegar, soy sauce, sesame oil, water).

Also made a pan of I'musingupallthoseapples!Rightnow!Inonefellswoop! apple crisp.

I still have leftover w.w. pasta tossed with with 'pink pesto' sauce, nuts & broccoli.
